If you Google "Pumpkin Fluff" the results will give you a million awesome recipes for a dish just like this one. I read through a few different ones, and fluffed accordingly. (Credit to all the Google Results, and coworker Cary for telling me about it in the first place.)
I personally think the Pumpkin Fluff was a highlight of the Superbowl - but that might just be me fluffing my own horn. Even better, you can keep the ingredients on hand, and whip this up in about 30 seconds when you need it.
Ingredients:
- 1 15oz can of Libby's Pumpkin (Please use Libby's. All others are imposters. Trust me, I've tried them all.)
- 1 Container of Cool Whip (I used the Light variety. They have Fat Free, Sugar Free, regular and a handful of others as wel)
- 1 Box of Instant Vanilla Pudding
- Pumpkin Pie Spice to taste.
Directions:
Throw it all into a bowl. And mix.
Serve:
With apples, graham crackers, pretzels, or whatever you can dream up!
Result:
Nom. Nom. Nom.

Jess - Good point - I should probably add that this dish needs a garnish. The Hummus/ChiliCheese Dip confusion isn't good for business!
LOVE. And yes, I agree with the garnish idea. I almost didn't taste this amazing goodness because I thought it was some sort of cheesy frito bean dip which I was not in the mood for. I would have seriously missed out.
